Healthy Quinoa Patties


I decided to search for a quinoa patties recipe and I couldn’t find one I really liked. So, I decided to create my own recipe and they tasted delicious.  I hope you enjoy them as much as I did!

Serves 2-4 people
Makes approx. 8 patties
  • 1 cup of uncooked quinoa
  • 1 medium carrot
  • 4 bell peppers
  • 1 head of Broccoli
  • Sea salt
  • Freshly ground pepper
  • 1 tablespoon of Dijon mustard
  • 2 large eggs
  • Avocado oil


Step 1.

Pour 2 cups of water into a pot and bring to a boil, add the quinoa into the pot and turn the heat to low. Cover the pot and let simmer for 10 minutes or until the water evaporates

Step 2.

Chop up the carrot, peppers and broccoli and finely blend in a food processor.  Add a drop of avocado oil into a saucepan at medium heat and place the blended vegetables into the pan, Stir ever 2 – 3 minutes until cooked then remove from heat and let cool.

Step 3.

Combine the vegetables with the quinoa into a mixing bowl and stir well.  Then add salt, pepper, mustard, whipped eggs and stir well.

Tip: It’s best to use your hands and combine the ingredients together as this ensures the raw egg is mixed in well.

Step 4.

Carefully roll out the mixture into 3 inch patties and place into a large hot saucepan at medium heat with a generous amount of oil. Cook the patties on each side for 3 – 4 minutes or until turned golden brown.

Tip: Cook a maximum of two patties at a time to leave room to flip them over.
